GREASE INTERCEPTOR REQUIREMENTS
Fats, grease and oil from local food service and preparation facilities is a major problem for
our local sewer system. The Division of Sanitary Sewers devotes many equipment and man hours
to unstopping and cleaning manholes, pump stations and sewers lines clogged with grease.
The Grease Interceptor Program implementation began in June of 2000 with the passing of the
new grease interceptor requirements in the LFUCG local sewer use ordinance. The new
ordinance lowered the discharge limitation for fats, oil and grease from 200 mg/L (milligrams
per liter) to 100 mg/L. Additionally the ordinance required installation of grease interceptors
in all food service and food preparation establishments. The deadline for installation of
grease interceptors was December 1, 2000. The program is administered through the Division
of Sanitary Sewers’ Industrial Pretreatment Section. Grease Ordinance
